Summer Sides - Tabbouleh & Beetroot Dip

The British weather really doesn’t know what it’s doing at the minute does it?! 30 degrees one day, 19 and raining the next…it’s a bit confusing to say the least!! I’ve got a couple of recipes for you today and they are quite summery ones so let’s hope for some more sunshine so they can be of use to some of you!!

These are great little recipes to make and keep in the fridge to have on the side of the meal or just to have handy when you can’t really be bothered to cook. They’ve both got really fresh flavours so have a nice summery feel to them!

A few of ideas for things you could have them with are roast chicken, steaks, veggie sausages or you could have them with a big salad and some feta on top! They’re also great BBQ sides - they go with pretty much anything really.

Tabbolueh (makes around 2 portions)

  • 70g cous cous (uncooked weight)

  • 4 large tomatoes, diced

  • 1/2 a red onion, diced

  • A handful of mint, chopped finely

  • 4 sun-dried tomatoes

  • 1 1/2 tablespoons of olive oil

  • Salt and pepper to taste

Method

  • Cook the cous cous according to packet instructions

  • Mix all the ingredients together in a big bowl and add salt and pepper to personal taste

Beetroot Dip

  • 2 beetroots

  • Juice of 1/4 lemon

  • 1 1/2 tablespoons of fat free yoghurt

  • Salt and pepper to taste

    Method

  • Blend all of the ingredients together in a food processor until smooth (keep going until it gets to a smooth consistency otherwise it’ll end up grainy and it’s not quite so good!)

  • Taste and add salt & pepper and a little bit more lemon juice if desired!
