GREEK STYLE GIANT BEANS

My mum bought me a Doctor’s Kitchen recipe book a couple of weeks ago and I’ve been really loving all of the recipes in it! The book is based around eating to beat illness by using great quality, nutritious ingredients that nourish your body which is sits well with my ethos too. it’s not about cutting out food groups or restricting yourself when it comes to diet, it’s about nourishing your body with great food to making you strong, fit and healthy.

This Greek Style Giant Beans recipe is from the book and is really quick and easy to make. It’s a great recipe that you can make at the weekend and heat up quickly one week night for dinner too. If you want to make enough for lunch the next day, just double up the recipe.

I added a bit of feta cheese to the top too which wasn’t in the original recipe because as we say in my house - everything is better with feta!
