Chicken & Chorizo Orzo
Orzo is another firm favourite of mine and something that I don’t eat enough! It looks like rice but it’s part of the pasta family – so it’s basically a much better version of rice. This is another pure comfort food meal perfect for the colder nights. The recipe serves 4 so has enough for your lunch the following day.
Approx. 500 calories per serving.

Ingredients
1 red onion, finely diced
1 red pepper, finely diced
1 teaspoon garlic/1 garlic clove
4 chicken breasts, cut into pieces
75g chorizo, sliced and cut into halves
1 chicken stock pot
300g orzo
1 ½ tablespoons paprika
A handful of chopped olives
A couple of sundried tomatoes, chopped
A handful of parsley, finely chopped
A squeeze of lemon juice
Method
Pan fry the onion and pepper in a little bit of olive oil until soft
Add the garlic, chicken & chorizo and cook for around 8 minutes
Add the orzo and paprika and stir for a minute to combine the flavours
Add the chicken stock pot and enough water to just cover the orzo & chicken
Leave to simmer for around 25-30 minutes, until the water has all absorbed and the chicken is cooked through. Taste the orzo and add more water if it isn’t cooked just yet.
Split into portions and top with the olives, sundried tomatoes, parsley and a squeeze of lemon juice
Season with salt and pepper and enjoy!
