Tofu Poke Bowl
I am a massive fan of Poke bowls from places like Honi Poke and Ahi Poke in London but I haven’t had one in so long! This brought back very good memories of them - I must admit my recreation probably isn’t as good as one from either of the places I mentioned however it’s a good home lunch alternative! This Poke sauce absolutely makes it. I got it from Waitrose, I haven’t seen it anywhere else but I’m sure you could also buy it online too - I’d say it’s essential for this dish!!
This is a great quick lunch if you’re at home - you could also take it to work if you put the tofu and rice in a separate Tupperware and heated them up in the microwave before adding them to the rest of the ingredients.
You can play around with toppings with this too - other things you could add are crispy onions, fish, chicken, cucumber or sesame seeds.

Ingredients
Approx. 100g smoked tofu (I use The Tofoo Co. smoked tofu. You could also use normal tofu or meat instead), chopped into cubes
Sesame oil
A handful of spinach
Half a bag of pre-cooked brown rice (or cook your own if you’re not lazy like me :))
3 tablespoons of edamame beans - either frozen or fresh
1 spring onion, diced
1/4 of an avocado
Kikkoman Poke sauce
Method
Fry your chopped tofu with a drizzle of sesame oil in a frying pan until it is browning on the outside and slightly crispy.
If you are using frozen edamame beans, defrost them in the microwave for around 40 seconds.
Cook your rice according to packet instructions.
Time to assemble - put the spinach in first, top with the tofu, rice, edamame beans, spring onion, avocado and a drizzle of Poke sauce. Season to taste.
