Garlicky Turkey Meatballs, Bulgar Wheat & Baba Ganoush
Ingredients (serves 4)
Meatballs:
500g lean turkey mince/quorn mince
1 red onion, finely diced
1 tablespoon Gochujang paste (I bought mine in Waitrose)
1 teaspoon lazy garlic/2 crushed garlic cloves
40g breadcrumbs
1 egg
1 tablespoon garlic granules
1 tsp salt
1 tsp pepper
To serve:
Bulgar Wheat - 4 portions according to packet instructions
1 vegetable stock cube
Baba ganoush/houmous
Vegetables of choice - I used tenderstem broccoli
Method
Mix all of the meatball ingredients together well in a bowl
Shape into 12 meatballs
Heat a little bit of oil in a frying pan on a medium heat and add half of the meatballs, cook for 10-12 minutes and then transfer to a baking tray and pop in the over while you cook the remaining 6. Make sure you check they are cooked before eating!
While the meatballs are cooking, cook the bulgar wheat according to packet instructions and add the vegetable stock to the water.
Cook your vegetables to taste - I grilled my broccoli with a little bit of olive oil, salt & pepper.
Serve with a dollop of either baba ganoush or houmous.
