Fajita Bowl
Ingredients (serves 2)
2 turkey steaks, cut into pieces OR for a veggie version use quorn/a selection of vegetables e.g. aubergine & courgette
Fajita spice mix
1 red or yellow pepper, sliced
1 red onion
1 tin black beans
1 vegetable stock cube
1/2 an avocado
1 garlic clove or 1/2 teaspoon of lazy garlic
A handful of rocket/salad leaves
Method
Heat some olive oil in a large frying pan and add the pepper and red onion. Cook for 5 minutes.
Add the turkey pieces to the pan and cook for a few minutes and then add 2 teaspoons of fajita spice mix (add more if you feel it needs it).
In a separate saucepan, heat a little bit of olive oil and add the garlic and a teaspoon of fajita spice. Stir for 30 seconds and then add the vegetable stock cube, 100ml of water and the black beans. Bring to a simmer and cook until the sauce has thickened.
While the beans & turkey are cooking, slice your avocado and put to one side.
Once everything is cooked, orange it onto your plate - rocket, turkey mix, beans and avocado. Top with coriander and enjoy!
