Buffalo Cauliflower Bites

This is a great side dish for a BBQ or a nice little afternoon snack! It’s Vegan too - I’m not Vegan but if you are then here you go - a recipe for you!! This recipe is taken from Dr Megan Rossi’s book Eat Yourself Healthy which is all about improving gut health and being healthy from the inside-out. So not only is this recipe tasty, it’s good for your insides too. I have tweaked the recipe very slightly from the book and given a couple of alternatives if you want to try them!

Ingredients:

Cauliflower:

4 tbsp self-raising flour

6-8 tbsp soy milk (or other milk alternative)

1 head of cauliflower, cut into bite sized pieces

40g ground almonds

Sauce:

170g ketchup

2 tsp soy sauce

2 tsp Worcestershire sauce

1 tsp smoked paprika

1/2 tsp garlic powder/lazy garlic

1 tsp chipotle chilli flakes/chipotle chilli paste/chill powder - whatever you have in the cupboard for a bit of spice!

A handful of spring onions, chopped

Method:

  • Mix the milk and flour together in a bowl and place the ground almonds in a separate bowl.

  • Coat the cauliflower in the milk/flour batter and then coat in the ground almonds.

  • Bake in the oven at 170 degrees for 20 minutes.

  • Meanwhile, put all the sauce ingredients in a pan and cook through for a couple of minutes.

  • Take the cauliflower out of the oven, dunk it into the sauce and then put them back in the oven for 5-10 minutes until they start to go a bit crispy.

  • Top with the chopped spring onions and serve!

You could do these with other sauces too - we did half with the above recipe and half with Sriracha sauce and they were equally as tasty!
